Bourbon Street Chicken

Another pinterest find during mom and dad's visit.  This one is very good with an Asian flare - kinda Panda Express ish.  I served it with a mixture of quinoa/brown rice cooked in chicken broth and the best part was that it threw together quickly.  The longest part was cooking the rice.

Southwestern Chicken Soup

  6051197 Ingredients (Serves 10-12) 2 tsp. oil 2 med. green bell peppers, diced 1 onion, diced 2 tsp. minced garlic rotisserie chicken (use what you like and freeze the rest) 2 (32 oz.) containers chicken broth 3 (10 oz.) cans mild tomatoes and green chilies 3 (16 oz.) cans pinto beans, rinsed and drained 2 (7 oz.) can corn with green and red bell peppers 3 cups cooked brown or white rice 1 pkg. taco seasoning mix 2 tsp. cumin I like a little salt to taste Toppings: shredded Cheddar cheese, sour cream, chopped green onions, tortilla strips Instructions In a stockpot, heat vegetable oil over medium-high heat. Add bell peppers, onion, and garlic and cook for 10 min. till onions are translucent. Add taco seasonings and cut up chicken. Stir in broth and the remaining ingredients. Top with toppings. Asian Noodle Salad

Another recipe found during mom and dad's October visit.  Mom and I were watching the cooking shows and saw Giada make this salad and it looked yummy.  I really like napa cabbage and this salad was just as good if not better the next day.  The cabbage holds up way better than lettuce does sitting overnight.  I really dislike a lettuce salad that's been thrown together and stuck in the fridge for the next day - soggy and wilted - yuck.  This was still crunchy and good. I didn't have almond butter so I just threw about 1 1/2 cups of the slivered almonds into the blender with the rest of the dressing ingredients.  I also added a bit more olive oil for consistency.  I really liked the toasted slivered almonds and would probably even add more.  I didn't put sesame seeds in cause mom can't handle them, but I might next time.  I also used 1 tsp. minced ginger in a jar instead of fresh.

Cheesy Cauliflower Soup

Another one from the Taste of Home.  They're on a roll lately.  Me, Mom, and Beth have all given this one two thumbs up.  It's super easy, has lots of veggies, (ok, it does have half & half and cheese ... but it could be worse) a good meatless meal.  Pair it with a good bread or homemade biscuits and voila, you've got dinner.  I made mine quickly on the stove, but it is a good crockpot recipe too.

Brownie S'mores

These are pretty amazing.  I did like them better the next day, but even fresh, I thought they were pretty awesome and everyone else agreed.  This was a pinterest find (my new habit).  I tripled the recipe to get 3 dozen, but I think doubling the brownie part would be best and making the filling and graham as just a single recipe is good. (Although you will still have too much graham).  I used the 1" cookie scoop not packed to put the right amount of graham crumbs in each tin.

Southwestern Corn and Black Bean Salad

This was a yummy find from good old Paula Deen once again.  Another find on mom and dad's recipe trying trip of 2012.  This is a cooked salad unlike my other corn salad - both very different.

Herbed Mashed Potatoe Bake

I got this one from best resource, Paula Deens magazine.  Another of the successful dishes mom and I tried on their 2012 visit.  This is nice because you don't peel the potatoes - you get all the good-for-you stuff in the peelings.

Roasted Fingerling Potatoes

I got this recipe from the Taste of Home.  I don't usually get a lot of recipes from there, but I have gotten a few "golden" ones which keeps me checking them out.  This was another recipe mom and I made on their 2012 trip.  We've been getting pretty lucky with some good ones and this one was one of the yummys of the week and EASY. This is also supposed to be put in foil and grilled on the bbq after microwaving, which you can do if you like.

Easy Texas BBQ Brisket

I got this from Taste of Home and was one of the many recipes mom and I tried on her 2012 fall visit. We didn't marinade it, but found it was much better the next day...maybe it's good the same day if you marinade it.  It was very easy and was good for a quick brisket bbq.  I think the other brisket recipe I have is better, but it needs a bbq and a little more of a process. We also halved the recipe.

Marshmallows

When I read that if you eat a homemade marshmallow, you'd never eat a store-bought one again, I didn't think much about it.  Then I made some and I'm the one saying you really won't eat a store-bought one again. My friends and I agree that these are the bomb.  They are easy to make and keep for several weeks in an airtight container in a cool dry place. I made these for Samantha Worlton's wedding reception because she wanted a s'mores bar and I didn't want to just have store bought marshmallows.  I looked on line and found several but the one I tried I found at Smitten Kitchen .  She gives a step by step if you want to check it out.

Energy Balls

I found the idea for these on Pinterest which is my new addiction.  You can actually put anything you want in these such as dried fruit in the place of the chocolate chips. (I just don't really like dried fruit).  I found that using unsweetened coconut made them not so sweet and a little better for you.  This is a doubled recipe because I like them so much.  It makes about 24-30 golfball size balls. Make them anysize you want and play around with the ingredients.  You just can't substitute agavae for the honey because it won't hold together well - the honey and peanut butter are the binding agents.
