Easy Italian Slow Cooker Chicken

The actual name of this recipe that I found on facebook was Stupid Easy Chicken, and really that name does fit it because it really is stupidly easy to make.  It's also great because you just throw it in a crockpot and boil up some noodles and voila...dinner. The recipe calls for cubed chicken, but if you need it to cook more like 6 hours, don't cube it and throw it in frozen. Serves: 6 3/4 cubed chicken breasts 2 (14oz.) cans Ital. diced tomatoes 1 envelope Lipton Savory Herb & Garlic mix (found right next to Lipton Onion Soup) Bow tie pasta - cooked parmesan Mix soup and tomato into crockpot.  Add chicken and stir.  Cook on low 4-5 hours.  Cook bow tie pasta.  Mix together at the end and top with the parmesan.

Swig Sugar Cookies

This actually came as a facebook post, but I'm sure it originated on pinterest and then I lost it but Tom Worlton got it and made it one night for Institute dessert.  He made a cream cheese frosting and it was yummy.  The sour cream frosting is also yummy.  Not sure which one I prefer, but the cookies are amazingly good even without the frosting.

Peach Crisp with Maple Cream Sauce

I made this the other night and it was awesome.  I actually made an additional 1/2 recipe and put it in a large pie dish but it was just a little too small and poured out over the edges so I'll use a bigger pan if I ever do that again.  Got this off pinterest but it's a Pioneer Woman recipe and it really is yummy and looks really pretty on a dish with the sauce drizzled over the top. Next time I think I'll use thawed frozen peaches instead of fresh and hopefully it will be faster and just as good. 5 to 6 whole fresh peaches (best not overly ripe or soft) 1 c. flour 1/2 c. sugar 1/2 c. light brown sugar, firmly packed 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. salt 1 stick butter 1/2 whole lemon and zest 7 Tblsp. real maple syrup, divided 1 1/2 c. whipping cream 3 Tblsp. light corn syrup In a medium bowl, mix flour, sugar, light brown sugar, cinnamon, nutmeg and salt using a fork or pastry cutter.  Cut butter into small pieces and gradually add to flour mixt...

Southwest Slow Cooker Chicken

This is extremely easy and cooks on low for about 6 hours if you use frozen chicken. I actually thought it was better the next day because it didn't have as much liquid and was easier to put in the tortilla) or make in plenty of time so it can sit and thicken.  This was another pinterest find, but I did doctor it up a bit by adding an additional can of black beans, green chilies, salt, and about 1 tsp. cumin.  You could also maybe try Monterey Jack cheese sprinkled on top of each serving. Serves: 8 ish 6 large or 8 small frozen chicken breasts 8 oz plus 4 oz. block cream cheese (I used light) 2 cans black beans, rinsed and drained 1 can corn or 1 cup frozen 1 can Rotel 1  can green chilies 1 tsp. cumin cheese (optional, and added at the end as you make them) 1 tsp. salt Put frozen chicken in the crockpot.  Add cream cheese, beans, corn, Rotel, and cumin. Broccoli, Ham, and Mozzarella Baked with Eggs

Got this off Pinterest.  It is VERY easy and very fast but you do have to take the time to chop the ham and blanch the broccoli for 2 min.  Otherwise, it goes together in a flash, is carb friendly, and fairly lowfat.   You can eat it for breakfast, lunch, or dinner  It's kid friendly too as long as the kids like broccoli. Serves:8 4-6 c. very small broccoli flowerets, blanched about 2 min., drained well. 2 c. diced ham (1 lb.) 1 c. low-fat grated Mozzarella 1/3 c. thinly sliced green onion (optional, but good) 8-10 eggs, well beaten Spike Seasoning (or other all-purpose seasoning blend) to taste (1 tsp. ish) fresh ground pepper to taste low-fat sour cream, for serving (optional) Heat oven to 375 degrees.  Spray a 9 x 13" dish with non-stick spray. Baked Sweet and Sour Chicken by Erin Willis 6054178 Ingredients (Serves 4-6) 3-4 boneless, skinless chicken breasts, cut into 1" pieces Salt and pepper to taste 1 1/2 c. cornstarch 3 beaten eggs 1/4 c. canola oil 1 c. granulated sugar 4 Tblsp. ketchup 1/4 c. white vinegar 1/4 c. apple cider vinegar 1 Tblsp. soysauce 1 tsp. garlic salt (I used about 3/4 tsp. garlic and 1/4 tsp. salt because I didn't have garlic salt) Instructions Preheat oven to 325 degrees. Salt and pepper the cut-up chicken. In separate bowls, place cornstarch and beaten eggs. Dip chicken into cornstarch then coat in egg. Heat oil in a large skillet over medium-high heat and cook chicken until lightly browned. Place the chicken in a 9 x 13 greased baking dish. In a medium sized mixing bowl, combine sugar, ketchup, apple cider vinegar, white vinegar, soysauce and garlic salt. Pour over chicken and bake for 1 hour uncovered.
