Baked Sweet and Sour Chicken

Ingredients (Serves 4-6)
3-4 boneless, skinless chicken breasts, cut into 1" pieces
Salt and pepper to taste
1 1/2 c. cornstarch
3 beaten eggs
1/4 c. canola oil
1 c. granulated sugar
4 Tblsp. ketchup
1/4 c. white vinegar
1/4 c. apple cider vinegar
1 Tblsp. soysauce
1 tsp. garlic salt (I used about 3/4 tsp. garlic and 1/4 tsp. salt because I didn't have garlic salt)
Instructions
Preheat oven to 325 degrees. Salt and pepper the cut-up chicken.
In separate bowls, place cornstarch and beaten eggs. Dip chicken into cornstarch then coat in egg.
Heat oil in a large skillet over medium-high heat and cook chicken until lightly browned. Place the chicken in a 9 x 13 greased baking dish.
In a medium sized mixing bowl, combine sugar, ketchup, apple cider vinegar, white vinegar, soysauce and garlic salt. Pour over chicken and bake for 1 hour uncovered.
Stir the chicken about every 15 minutes so that it coats them in the sauce.
