Pizza Sauce

I found this quick and easy pizza sauce when I was on my great search for a Fired Pie copycat recipe. This was very yummy and freezes well (it made more than I could use a one time). 2 T. Olive Oil 1 red onion, minced 3 cloves garlic, minced 1 small can tomato paste 1 quart crushed tomatoes (I used San Marzano and crushed them) 1 tsp. honey 1/2 tsp. sea salt pepper to taste 2 Tblsp. fresh basil, minced (or 2 tsp. dried) Heat oil and add onion for 5 min.  Add garlic and saute 1 more minute.  Turn down heat and add remaining ingredients.  Simmer 10 minutes longer.  Add basil at the end.

Doctored up Costco Quinoa Salad

I'm not a fan of this salad alone, but after I added a bunch of stuff, it turned out great...one of my favorites.  In fact, I took this on our last girls week in Tucson, and the ladies loooved it.  It's also one of the few salads that Dad will eat. You can add or subtract anything you like or don't like and it will still be great! 1 Costco Quinoa salad (found in the lower refrigerated cases by the chicken) 1 bunch curly kale chopped 1 bunch cilantro 1/4 finely chopped red onion 1 avocado chopped juice of 1 lime 1 can rinsed and drained black beans salt pepper you can add more chopped cucumber and tomatoes if you like. YUMMMMM
