This one of Dan's favorites.  This is from the Juice book I got from Sam's.  It's loaded with power veggies and fruit and is a great way to start the day. Makes 6 servings 4 carrots 2 strips pineapple 2 apples 2 pears 1 beet 1/2 c. brussel sprouts 1/2 c. broccoli florets 1/4 c. cauliflower

Healthy Heart

This one is also from my juicing manual It's a good way to eat brussel sprouts especially if you don't like them like me. I use frozen  pomegranite seeds so I don't have to keep fresh ones around. 3 oranges 5 brussel sprouts 1 bunch seedless red grapes 1 c. pomegranite seeds

Very Orange Potato

Another from my juicing manual - pretty good way to get a sweet potato if you don't like them. 1 peeled orange 1 pear 2 carrots 1 sweet potato

Mama Mia

I found this one in the book that came with my juicer.  Funny thing is - I hate beets! But I do really like this juice, so for me, this is about the only way I'm going to include them in my diet. 4 oranges 1 beet

Double Chocolate and Prune Energy Bars

Another pinterest find.  It's a great way to use prunes, especially if you need the help prunes can give but don't like the taste.  I cut them into bars and wrap them to go. 1 c. almonds, raw or toasted 1/2 c. dark chocolate chips 1/2 c. flaxseed meal 1 lb. whole pitted prunes 3 Tblsp. honey 1/2 c. cocoa 2 Tblsp. peanut butter Line an 8 x 8" pan (or other small pan0 with a piece of parchment paper or foil so that the paper hangs over the long edges.  Set aside. In a food processor, with the metal blade, add almonds and pulse until coarse bread crumbs have formed. Add dark chocolate chips and flaxseed meal and pulse until finely chopped.  Place this mixture in a bowl   and set aside. Place prunes, honey, peanut butter and cocoa into the food processor and pulse until mixture is finely chopped and it comes together nicely. Not Yo' Mama's Banana PuddingI

Got this from Paula (we're on a first name basis now).  Dan's family calls the original recipe that has just the pudding, bananas, and vanilla wafers Sitting Bull.  I think I like this fancied up version better.  It has you using these chessman cookies.  I didn't have any so I just used vanilla wafers...you could also use graham crackers and I'm sure they would work also.  I made mine in a trifle dish instead of a pan and it was cute and yummy. (I sprinkled mini vanilla wafers on top). I also used lowfat cream cheese, whipped topping, and milk. 1 12- oz. container frozen whipped topping thawed, or equal amount of whipped cream 1 14-oz. an sweetened condensed milk 1 8-oz. package cream cheese, softened 2 c. milk 1 5-oz. box instant French vanilla pudding 6-8 bananas, sliced (I only used about 5)  2 bags Pepperidge Farm Chessmen cookies Line the bottom of a 13x9x2-inch dish with 1 bag of cookies and layer bananas on top. Canadian Cauliflower Cheddar Cups

I pulled this dandy little treat from one of those Costco magazines.  We've been trying to eat more varieties of fruits and veggies, so I'm looking for lots of different ways to cook them up.  This was so good that Dan (who usually turns his nose up to cauliflower especially) really liked it.  They're also very cute and very easy. 12 slices Canadian bacon 2 c. cauliflower florets 2 Tblsp. light sour cream 1 Tblsp. fresh parsley 1 Tblsp. green onion, diced Salt and pepper to taste Preheat oven to 375 degrees.  Very lightly grease a 12-cup mini-muffin pan.  Line each cup with a slice of Canadian bacon.  On the stovetop, steam cauliflower until very soft.  Transfer cauliflower to a bowl and mash it.  Add sour cream, parsley, green onion, and salt and pepper to taste, and mix well. Fill Canadian bacon cups with cauliflower mixture.  Top each cup with cheddar cheese.  Bake for 15 minutes.  Makes 12 mini-cups.
