Canadian Cauliflower Cheddar Cups

I pulled this dandy little treat from one of those Costco magazines.  We've been trying to eat more varieties of fruits and veggies, so I'm looking for lots of different ways to cook them up.  This was so good that Dan (who usually turns his nose up to cauliflower especially) really liked it.  They're also very cute and very easy.

12 slices Canadian bacon
2 c. cauliflower florets
2 Tblsp. light sour cream
1 Tblsp. fresh parsley
1 Tblsp. green onion, diced
Salt and pepper to taste

Preheat oven to 375 degrees.  Very lightly grease a 12-cup mini-muffin pan.  Line each cup with a slice of Canadian bacon.  On the stovetop, steam cauliflower until very soft.  Transfer cauliflower to a bowl and mash it.  Add sour cream, parsley, green onion, and salt and pepper to taste, and mix well.
Fill Canadian bacon cups with cauliflower mixture.  Top each cup with cheddar cheese.  Bake for 15 minutes.  Makes 12 mini-cups.
