Another pinterest find. It's a great way to use prunes, especially if you need the help prunes can give but don't like the taste. I cut them into bars and wrap them to go.
1 c. almonds, raw or toasted
1/2 c. dark chocolate chips
1/2 c. flaxseed meal
1 lb. whole pitted prunes
3 Tblsp. honey
1/2 c. cocoa
2 Tblsp. peanut butter
Line an 8 x 8" pan (or other small pan0 with a piece of parchment paper or foil so that the paper hangs over the long edges. Set aside.
In a food processor, with the metal blade, add almonds and pulse until coarse bread crumbs have formed. Add dark chocolate chips and flaxseed meal and pulse until finely chopped. Place this mixture in a bowl
and set aside.
Place prunes, honey, peanut butter and cocoa into the food processor and pulse until mixture is finely chopped and it comes together nicely. Add previous almond mixture into the food processor and pulse for few seconds until everything comes together.
Press the mixture evenly over the pan and fold excess parchment over the bars. Place a plate to cover the bars and refrigerate for 2 hours.
Transfer the mixture to a cutting board and cut as desired. Keep wrapped in the fridge.
