Couscous Mediterranean Style

Serves 5-6
I got this off the back of the bag of couscous and I really liked it


1 c. pearl couscous
2 Tblsp. olive oil
1/2 c. chopped onion
1/2 c. chopped green or red pepper
1/2 c. chopped spinach
1/2 c. chopped tomatoes
1 Tblsp. minced garlic
2 c. chicken or veg. broth
1/4 c. sliced black olives
1/4 c. chopped fresh basil
1/4 c. parmesan cheese

Heat the olive oil in a small pan.  Gently cook the chopped onions, peppers, spinach and diced tomatoes in the pan for 2 -3  minutes or until soft.  Add the couscous, stir well.  Add chopped garlic and cover with 2 c. broth or water.  Season to taste.
Cover and simmer for 8-10 minutes, stirring occasionally.  When finished, stir in the sliced black olives and garnish with freshly chopped basil and grated parmesan cheese.
