This is another recipe mom would make for us for after school. It comes from the old red and white checked Better Homes and Garden recipe book. One day recently, we had all gone to Char's and mom had taken these cookies and I had made some different peanut butter cookie. Hank came in and took one of each and declared hands down that mom's were better. Peanut butter cookies are Dan's favorite cookie. Like I said, I had made the other peanut butter cookies and he liked them, but after I made these, he said they were perfecto!
Makes 4 dozen/8 dozen:The amount in parenthesis is the non-doubled recipe
1 (1/2) c. butter
1 (1/2) c. crunchy peanut butter
1 (1/2) c. sugar
1 (1/2) c. brown sugar
2 (1) eggs
1 (1/2) tsp. vanilla
2 1/2 (1 1/4) c. sifted flour
1 1/2 (3/4) tsp. soda
1/2 (1/4) tsp. salt
Thoroughly cream butter peanut butter sugarsm egg, and vanilla. Sift together dry ingredients; blend into creamed mixture. Shape in 1-inch balls; roll in sugar. Place 2 inches apart on ungreased cookie Sheet. Press a criss-cross into each cookie with a fork. Bake at 375 degrees for 10-12 minutes. Cool slightly and remove from pan.
