Mama's Banana Bread

I got this out of Paula Deens magazine and I think it's very good.  It takes slightly different ingredients and slightly more oil/butter and also takes way more sour cream.  I like it, but you can choose which you like better.



6 ripe bananas
2 Tblsp. vanilla
2 c. firmly packed brown sugar
1 1/2 c. oil
1 c. sour cream
4 large eggs
3 1/2 c. flour (I used 1/2 soft white whole wheat flour)
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1 c. ground pecans (optional)
2 c. mini semisweet chocolate morsels (also optional)

Preheat oven to 350 degrees.  Grease two (6 x 9-inch) loaf pans.
In a small bowl, mash bananas together with vanilla.
In a large bowl combine brown sugar, oil, sour cream, and eggs, stirring
until combined.
In a medium bowl, combine flour, baking soda, baking powder, and salt.
Gradually add to sugar mixture, stirring until just combined.  Stir in banana
mixture, ground pecans, and mini chocolate morsels. Pour into pans and
bake for 1 hour and 15 minutes, or until center is firm and edges start to pull
away from pan.  Let cool in pans for 15 minutes; remove from pans, and cool
completely on wire racks.
