Mint Sandwich Brownies

Filling:
Make your favorite brownies (9x13) and cool. I like to use Ghirradelli (they are hands down the best brownie). I got this recipe from Kathleen Bingham but just recently updated it to the Ghirradelli (which has become my ultimate choice for brownies) because a friend on my temple shift on Fridays made these and they were fabulous.

Cream together:
3c powdered sugar
6 T butter or margarine
3 T half & half or milk
2 t peppermint extract
enough red or green food coloring to make a pretty color

Spread over brownies and freeze for 20 minutes.

Melt together 2 c chocolate chips and  1 stick butter. Very carefully, spread over the mint mixture.
