I made this up after Granddad had this at Valle Luna. You can cut up the veggies and just cook up what you want to use.
Serves: 10 - 12
2 zucchini, diced
2 yellow zucchini, diced
1 yellow pepper, diced
1 red pepper, diced
1 orange pepper, diced
1 red onion , chopped
1 pkg. Frozen corn
Dice up the veggies and mix them together Combine ingredients and store in a container with a paper towel in the bottom. I haven’t tried freezing them, but it might work. I take out as much as I want to use and put them into a very hot skillet frying pan (I like a cast iron the best). Cook till until just barely tender and add butter and either seasoned salt or the Grill Creations smokey Smokey seasoningSeasoning.
