This is Aunt Char’s recipe and it’s really good for Thanksgiving or Christmas
I never liked sweet potatoes, but this one of fab.
Serves:
5 large yams baked till tender
½ cup butter, softened
½ cup sugar
2 eggs, beaten
1 tsp. vanilla
1/3 cup milk
Mix Bake yams until tender. Scoop out the the insides of the yams and mix with, the butter, sugar, eggs, vanilla and milk together within an electric mixer. Pour into a greased baking dish. Make the praline topping and put on top of the yams. Bake uncovered at 350 degrees for 30-45 minutes or till the pralines begin to brown.
Praline topping:
½ cup cream
1 cup brown sugar
1/3 cup butter, melted
1 cup chopped pecans
Bring In a saucepan, bring cream to simmer and add the brown sugar. Stir till dissolved. Raise the heat and cook to 235 degrees. Remove from heat and add the butter and pecans.
