Biscotti


I got this recipe from Bevelaqua’s who lived in Boston and then moved to Phx. Erin
likes to make this


2 cups flour
1 stick butter, melted
¾ cup sugar
2 tsp. Baking powder
3 tsp. Vanilla, almond extract, orange extract, or anise
2 eggs

Mix all of the above together (dough will be sticky). Divide into three loaves and place on greased cookie sheet (unless it’s non-stick). Bake at 350 degrees for 30 minutes. They will be light brown when done.
Wait until they are slightly cooled off, then cut each loaf at an angle. There should be 8 cookies from each loaf.
If you want them crispy, after they are cut place them back on the cookie sheet and bake them longer. Otherwise, they will be cake-like. You can take the twice-baked ones and dip them halfway in melted chocolate and then in sprinkles to decorate, if you like.
