This is Beth’s recipe she brought home from school
4 eggs
2 cups sugar
1 cup oil
2 cups canned pumpkin
2 cups flour
2 tsp. Baking powder
½ tsp. Salt
1 tsp. Baking soda
1 ½ tsp. Cinnamon
Frosting:
3 oz. Cream cheese, softened
¾ stick butter, softened
1 tsp. Vanilla
1 ¾ cups powdered sugar
Mix together all the wet ingredients and then add the dry and mix well. Pour into 2 9x13-inch pans. Bake at 325 degrees for 25 minutes or until done in the center.
Cream the ingredients for the frosting together and spread on the bars while still slightly warm. Frosting should make a glaze.
