Chocolate Oatmeal Cookies

This came from Holiday Cookies 2010



1 3/4 c old-fashioned oats
1 cup flour
3/4 t baking powder
1/2 t baking soda
1/2 t salt
10 T unsalted butter softened
1 c packed brown sugar
1 large egg, room temperature
1 t vanilla extract
3 oz milk chocolate, melted and cooled
1 c semi sweet chocolate chips
1 c pecans or walnuts, chopped

Adjust oven racks to upper-middle and lower-middle positions and heat oven to 350 degrees.  Line 2 baking sheets with parchment paper.  Process 1 cup oats in food processor or blender until finely ground, 30 seconds.  Transfer to a bowl and stir in flour, baking powder, baking soda, and salt.

With electric mixer on medium-high speed, beat butter and brown sugar until smooth, 1 minute.  Add egg and vanilla and beat until light and fluffy.  Add melted chocolate and beat until combined.  Reduce speed to low and add flour mixture, mixing until just incorporated.  Add remaining oats, chocolate chops, and nuts and mix until evenly distributed.

Roll 2 tablespoons of dough into balls and space 2 inches apart on baking sheets.  Bake until cookies are cracked and set on top but look moist within cracks, 14 to 18 minutes, switching and rotating sheets halfway through baking.  Cool 5 minutes, then transfer to wire rack to cool completely.
