Caramel-Apple Cheesecake Bars with Streusel Topping (Paula Deen)

2 c. flour
1/2 c. firmly packed brown sugar
1 c. butter
2 (8oz.) packages cream cheese, softened
1/2 c. plus 2 Tblsp. sugar; divided
2 large eggs
1 tsp. vanilla extract
3 Granny Smith apples, peeled, cored, and finely chopped
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Streusel Topping
1/2 c. caramel ice cream topping

Preheat oven to 350 degree.  Line a 13x9-inch baking pan with heavy-duty aluminum foil.
In a medium bowl, combine flour and brown sugar; Using a pastry blender; cut in butter until mixture is crumbly.  Press evenloy into prepared pan.  Bake for 15 minutes, or until lightly browned.
In a large bowl, beat cream cheese at medium speed with an electric mixer until creamy.  Beat in 1/2 c. sugar; eggs, and vanilla until smooth.  Pour over warm crust.
In a small bowl, stir together chopped apples, remaining 2 Tblsp. sugar; cinnamon, and nutmeg.  Spoon evenly over cream cheese mixture.  Sprinkle evenly with Streusel Topping.  Bake for 30-35 minutes, or until filling is set.  Drizzle with caramel.

Streusel Topping

1 c. firmly packed brown sugar
1 c. flour
1/2 c. quick oats (I used regular)
1/2 c. butter, softened

In a small bowl, combine brown sugar, flour, oats, and butter.
