I got this from Taste of Home. This is one of my favorite Christmas cookies that I give away. They're super addictive so I wouldn't make too many or you'll end up with no stopping point. You'll just go on and on and on eating your way into oblivion.
yield: 3-1/2 dozen
1 c. butter (no substitutes), softened
1/2 c. packed brown sugar
2 1/4 c. flour
In a mixing bowl, cream butter and sugar. Gradually stir in the flour. Turn onto a lightly floured surface and knead until smooth, about 3 minutes.
**Cook's Note: Continue mixing in the bowl of a mixer until it forms a ball, several minutes. Then let rest before turning onto counter.
Pat into a 1/3-in.-thick rectangle measuring 11 in-thick rectangle measureing 11 in. x 8 in. Cut into 2-in. x 1-in. strips. Place 1 in. apart on ungreased baking sheets. Prick with a fork. Bake at 300 degrees for 25 minutes or until bottom begins to brown. Cool for 5 minutes; remove to a wire rack to cool completely.
