This is Erin's recipe
2 Tblsp. oil
1 chopped onion
1/4 tsp. red pepper flakes
1 1/2 tsp. cumin
Saute the above in a frying pan. Then add:
2 Tblsp. tomato paste, 3 cloves garlic and 1 lb. hamburger. Cook till the hamburger is done and add:
10 oz. corn
3 c. fresh spinach till wilts
In a greased 9 x 13 pan, layer flour tortillas, meat mixture, monterey jack cheese. End with tortillas and cheese. Bake at 400 degrees for 15-20 minutes.
Serve with sour cream.
