Wakefield’s Barbequed Pork Ribs

This is one of my favorites. I got this recipe from Cathy Wakefield Mecham back in the 80’s. I think her grandparents had a restaurant

Serves: 8

1 (46-oz.) Bottle of ketchup
equal amount 5 ½ cups of water
2 Tbls. Cider vinegar
1 Tbls. Worcestershire sauce
2/3 cup brown sugar
1 tsp. Salt
1 tsp. Pepper
¼ tsp. Cayenne pepper
2 l/2 tsp. Chili powder
1 Tbls. Liquid smoke
Boneless country style pork ribs (I use 1
Sam’s club size pkg.) Approx how many pounds of meat, Mom?
1 to 2 sliced onions (optional)

Mix and cook the ketchup, water, vinegar, Worcestershire, brown sugar, salt, pepper, cayenne, and chili powder in a ssaucepan for 15 minutes. Salt and pepper the ribs and brush each front and back with liquid smoke. Let set 1 hour. Cook in oven with onions 1 hour at 350 degrees in a covered pan; drain off liquid. Pour the cooked sauce over the top of ribs; cover and cook in 300 degree oven 3 more hours.
They freeze well.
