Tuna Salad

This is Mom’s recipe and Dan really likes it

Serves: 8

2 cups small shell macaroni, cooked
2 cans drained tuna, draineda
¼ cup finely chopped onion, finely chopped
&1/4 cup celery, finely chopped
1 tsp. Regular yellow mustard
1 – 2 Tbls. Sweet relish
4 – 5 hard boiled eggs, chopped
Mayonnaise (or use ½ Miracle Whip and Mayo or
½ silken Tofu and Mayo for lighter versions)
½ - 1 tsp. Salt
Pepper
Paprika

Combine about 1 cup of mayo with the onion, celery, mustard, relish, salt and pepper. Add the tuna, noodles and eggs. Mix gently. You can add more mayo or sometimes I just add a little milk to make it creamier. Sprinkle the top with paprika.
