5 Tbls. Cornstarch
1 cup sugar
2 cup water
¼ tsp. Salt
3 slightly beaten egg yolks
2 Tbls butter
5 Tbls. Lemon juice
1 tsp. Grated lemon rind (optional)
Combine the sugar and cornstarch in a saucepan. Add the water and salt and bring to a boil stirring constantly till clear and starchy looking (will be slightly thickened). Add the 3 egg yolks very slowly so as not to get lumps of egg. Cook and stir 2 to 3 minute till it comes to a full boil. Add the butter, lemon juice, and lemon rind. Pour into a baked crust
Top with meringue while still very hot.
