Kielbasa Pasta

I got this one out of the newspaper, and it ended up being one of my favorites

Serves: 4 –5

1 cup uncooked pasta (I like rotini)
3 Tbls. Olive oil
1 cup sliced carrots
1 cup broccoli flowerets
¼ cup chopped onion
¼ cup chopped red bell pepper
¼ cup chopped green bell pepper
1 clove garlic (or 1 tsp.)
1 cup sliced mushrooms
1 lb. Kielbasa or light kielbasa cut into
bite-size pieces
1 tsp. Oregano
½ cup parmesan cheese

Cook pasta according to package directions. Drain.
Heat oil in a large skillet or Dutch oven. Add carrots and stir-fry 2 minutes. Add broccoli and stir-fry 1 minute; add onion, peppers and garlic and stir-fry 2 minutes; add mushrooms and stir-fry 1 minute. Add kielbasa, pasta and oregano. Stir to blend. Cover and reduce heat to low. Simmer 10 minutes. Add cheese, cover and simmer until cheese is melted, about 5 minutes.
