Holiday Potatoes

Greg and I really like these. It’s an old Relief Society Recipe and
is also called Funeral Potatoes.

Serves: 8-10

8 med. Potatoes (Idaho) cooked till barely tender
peel and grate coarsely when cooled. You can also
use frozen hash brown potatoes.
Combine:
½ cup melted butter
1 cup cream of chicken soup
Then add:
1 cup sour cream
½ tsp. Salt
¼ tsp. Pepper
3 chopped green onions
1 ½ cup grated cheese, divided
Top with these in the last 15 minutes of baking: Bake at 350 degrees in
A 9 x 13 pan for ½ hour.
½ cup grated cheese
½ cup crushed cornflakes

Combine the potatoes, butter, and soup. Then mix in the sour cream, salt, pepper, onions, and 1 cup of the cheese. Put in a 9 x 13 pan and bake at 350 for 15 minutes. Top with remaining cheese and cornflakes and bake for another 15 minutes.
