Serves:
3 to 4 lb. Chuck roast (trim fat)
1 can chopped green chilies
l Large onion
1 tsp.cumin
1 tsp. Minced garlic
1 tsp. oregano
2 beef bouillon cubes
Cook roast in a covered roasting pan in the oven at 350 degrees . Put just a little water in the pan with the roast. Cook several hours till the meat pulls apart with two forks. Add the bouillon cubes, green chilies, about 1 tsp. Oregano, 1 tsp. Cumin, and 1 tsp. Garlicup Sautee the onion in a pan and cook till they are clear and limp. Add to the meat. Serve in tortillas. Also makes great meat for nachos.
