Glazed Carrots

This is one of my favorites and it is one of those recipes that you don’t have to get exactly right. It can be divided

Serves: 8 – 10

24 carrots; peeled and sliced l/4 inch thick
2 tsp. Cornstarch
1 tsp. Salt
8 Tbls. Brown sugar
4 Tbls. Honey
8 Tbls. Butter
2 tsp. Grated orange rind zest (optional)
2 tsp. Cornstarch

Mix the cornstarch with the sugar and then combine all ingredients except carrotswith honey, butter, salt and orange zest. Microwave on high for 2 minutes. Cook the carrots with a little water. Pour the sauce over the cooked carrots.
