Enchilada Casserole

This recipe came from Mom and is one of my favorites

Serves: 8

3 lbs. ground beef
1 large chopped onion, chopped
1 small can chopped green chilies
1 large and 1 small can Macayo's Enchilada sauce
(You can use any brand you like)
½ or more pkg. Corn tortillas, quartered
grated cheese (use Colby-jack, Monterey jack, pepper jack, or any of the Mexican blend cheeses)

Cook Brown the hamburger beef with the onion in a frying panskillet over medium-high heat and drain. Add green chilies and the enchilada sauce. In a greased casserole dish (preferably a 9 x 13) pan put down a layer of tortillas. Put ½ of the enchilada sauce mixture over the top tortillas and top with a good amount of cheese. Add another layer of tortillas, and top with remaining sauce and sprinkle with a good amount of cheese. Bake covered at 350 degrees for 30 minutes. (Some people like to bake it uncovered)You could also bake uncovered to brown the cheese.

YSA Enchilada Casserole
Serves 45-60 people

YOU HAVE EXTRA INGREDIENTS LISTED...PLEASE ADJUST THE INSTRUCTIONS

8 (10) lb. hamburger
1 quesadilla cheese  (is this instead of the Colby-jack, or any of the Mexican blend cheeses?)
5 (7) large cans enchilada sauce
4 (6) cans green chilies  Where did these come from?
1 bag (+2 onions) onions
3 (5) pkgs. corn tortillas
These are good served with the enchiladas.
1 (2) sour cream  ...and this
1 bag Sams chopped romaine  ...and this

Suggested Sides
Refried beans: 4 (6) c. pintos
butter
4 (5) bags grated cheese

3 (5) bags baby carrots
