This is one of my favorite recipes. We got it from the Hintz's when we used to go to Lake Powell
Serves: 8
1 cup plain bread crumbs
¼ cup Parmesan cheese
8 boneless, skinless breasts (pound with meat
tenderizer till thin).
Sprinkle with garlic
, salt,
& pepper
8 thin slices of ham
8 thin slices of Swiss cheese
Combine the bread crumbs and parmesan cheese. Set aside. After pounding breasts thin, sprinkle with seasonings. Ttop each breast with 1 slice of ham and 1 slice of cheese.
Dip in beaten egg. Roll in the bread crumb mixture.
Roll in:
1 cup plain bread crumbs
¼ cup Parmesan cheese
Bake at 375 degrees for 30 minutes. tilluntil lightly browned.
Gravy
½ cup sour cream
1 cup golden mushroom soup
½ cup water
Mix together and pour over baked chicken. Cook 10 minutes more.
